KUGELS


Apple Kugel

1 cup flour
1 cup sugar
1 cup oil
4 eggs
1 tsp. baking powder
2-3 lbs. apples
1 tsp. cinnamon
3 tsp. sugar

Mix flour, sugar, oil, eggs and baking powder. In separate bowl, mix apples (peeled and sliced thinly) with cinnamon and 3 tsp. sugar. Add apple mixture to flour mixture. Bake in 9x13 pan at 350 for 1 hour, or until done.



Yerushalmi Kugel

12 oz. pkg. thin noodles
5 eggs
1/2 cup oil
1-1/4 cup sugar
1 tsp. salt
1/4 tsp. pepper

Cook noodles, rinse & drain. In separate pot pour oil & 3/4 cup sugar. Stir on medium flame until sugar is liquid dark brown. Add noodles mixing continuously on low flame, until brown. Remove from flame and cool. Add eggs, salt, pepper and the rest of the sugar. Mix well. Pour into 9x9 pan and bake at 350 for 1 hour.



Yerushalmi-type kugel

4-1/4 cups water
1 stick margarine
1 cup sugar
2 tsp. salt
1 tsp. pepper
2 tbs. brown sugar
2 eggs, beaten
16 oz. thin noodles (Pennsylvania Dutch are best)

In large pot, boil water, margarine, sugar, salt, pepper and brown sugar. When dissolved, remove from flame and add noodles. Mix well. Let it cool. Add 2 beaten eggs. Bake in 9x13 at 350 for 50 minutes.



Rice Kugel

1 cup rice
1 tsp. salt
4 cups boiling water
1/4 cup margarine
½ cup confectioners sugar
4 eggs
½ tsp. cinnamon
½ cup raisins
1/4 cup nuts

Cook rice in salted water until tender. Drain. Cream margarine and sugar. Add eggs one at a time, beating. Add remaining ingredients. Add cooked rice. Pour into casserole dish and bake 350° for 1 hour.
